Here is a great chocolate chip cookie recipe that everyone in the house loves!
1 cup and 3 tblsp. of All-Purpose Flour (see day 2)
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. sea salt
1/2 cup all-vegetable shortening, at room temp.
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg
1 tsp. organic vanilla extract
1 cup GFCF chocolate chips
Preheat oven to 375. Line a baking sheet with parchment paper. In a small bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl and using a fork, beat together the shortening, brown sugar, and granulated sugar until fluffy, about 2 min. Beat in the egg and vanilla. Gradually mix in the flour mixture; stir in the chocolate chips.
Spoon about about 1 tblsp. of dough onto the prepared cookie sheet leaving about 2 inches between cookies. Bake 12 min.; until golden at the edges. Let cool 2 min. before transfer to a wire rack. Enjoy!
We also tried some of the Udi's muffins recently. FABULOUS! The only drawback is they are $7 for 4 large muffins. I have written down the list of ingredients and plan to experiment some after Christmas in hopes of getting a close recipe. I will share it if I do.
I am still on the hunt for a good Mac N Cheese and cake recipe. They are selling box cake mixes now that are Gluten Free but they are not very good using the dairy free butter!
